Iced filter coffee is a robust, aromatic experience that captures the deep, toasted flavours of South Indian coffee beans with a cooling, modern twist. The secret is to brew a very strong decoction using a traditional metal filter and then rapidly cool it before adding ice. This prevents the coffee from tasting diluted and maintains its signature strength and bold character.
3 tbsp finely ground coffee powder (with chicory)  1/2 cup boiling water  1/2 cup chilled milk or water  1 tsp sugar or jaggery  1 cup ice cubes
Place the coffee powder in the top compartment of the filter, press it down firmly with the plunger, and pour the boiling water over it to extract a thick, dark decoction.
Dissolve your preferred sweetener into the hot decoction while it is still fresh to ensure it incorporates fully.
Fill a tall glass with ice cubes and pour the cold milk or water into the glass first.
Pour the coffee decoction slowly over the milk or water, stir to combine, and enjoy the rich, aromatic profile of perfectly brewed filter coffee.
