Filter coffee is a staple beverage across South India and is traditionally brewed using a metal coffee filter. The method creates a strong coffee decoction that is later mixed with hot milk and sugar. Chicory is often blended with coffee grounds to enhance the body and aroma of the brew. The drink is famously served in a steel tumbler and dabarah and poured back and forth to create a creamy froth.

Ingredients

2 tbsp South Indian filter coffee grounds ¾ cup hot water ¾ cup milk Sugar to taste

Step 1

Add coffee powder to the upper chamber of a traditional coffee filter and press gently with the perforated disc.

Step 2

Pour hot water over the powder and allow the decoction to slowly drip into the lower chamber.

Step 3

Heat milk separately until hot and dissolve sugar in it.

Step 4

Add a few tablespoons of the coffee decoction to a tumbler and pour hot milk over it.

Step 5

Pour the coffee between two tumblers to create froth before serving.
