A classic Indian dessert, rice kheer is creamy, fragrant, and flavoured with cardamom, saffron, and nuts - perfect for festive celebrations or cosy family meals.
¼ cup basmati rice 1 litre of full-fat milk ¼ cup sugar (adjust to taste) 4-5 crushed cardamom pods A few saffron strands 2 tbsp chopped almonds and cashews 1 tbsp raisins
Rinse rice and soak for 20 minutes.
Boil milk in a heavy pan and add the soaked rice.
Simmer on low flame, stirring often, until rice softens and milk thickens.
Add sugar, cardamom, saffron, and nuts; cook for 5 more minutes.
Garnish with extra nuts and serve warm or chilled.
