Warm, soupy, and comforting, vegetable thukpa is the kind of meal that is nutritious and comforting at the same time. A staple in the Himalayan regions, this noodle soup is the ultimate comfort food. Its light yet filling qualities make it a perfect choice for anyone new to trying this sort of dish. It's easy to cook and incredibly soothing to eat with its mix of simple veggies and a gentle blend of spices.
Noodles - 100g Oil - 1 tsp Garlic- 6-8 Ginger- ½ inch Onion- 1 Carrots- 1 Cabbage- 1 Capsicums- 1 Soya sauce - 1 tbsp Black pepper powder- ½ tsp Salt - add to taste Vegetable stock or water- 4 cups Spring onions - for garnish
Take the noodles and boil them in a pot according to the time mentioned in the package.
Once done drain and set them aside.
Add oil in the pot and sauté garlic and ginger until they soft.
Next, add onions cook until slightly softened on the bottom.
Now add all the other chopped veggies in the pot and stir-fry them for a couple of minutes
Pour in stock or water and let it come to a gentle boil
Add a spoonful of soya sauce, a pinch of pepper and a dash of salt and give it all a good stir.
Add in cooked noodles and let it all simmer for a few minutes
Finish it off with a sprinkle of chopped spring onions and you are done.
