Chewy handmade noodles tossed in buttery garlic masala taste even better than packaged Wai Wai. The smoky spice mix, crunchy vegetables, and chilli-loaded seasoning recreate that nostalgic street-style flavour completely from scratch.
For Noodles 1 cup all-purpose flour 2 tbsp wheat flour 1/4 tsp salt 1 tsp oil Water as needed
For Wai Wai Masala 1 tsp chilli flakes 1/2 tsp turmeric 1 tsp cumin powder 1 tsp coriander powder 1/2 tsp black pepper 1 tsp garlic powder 1 tsp onion powder 1 tsp salt 1/2 tsp sugar
For Stir Fry 1 tbsp butter 1 tsp garlic, chopped 2 tbsp onion, sliced 2 tbsp cabbage, shredded 2 tbsp capsicum, sliced 1 green chilli, chopped 1 tsp soy sauce 1 tsp chilli sauce Spring onion for garnish
Knead both flours with salt, oil, and water into a firm dough before resting for 20 minutes.
Roll the dough thinly, cut noodle strips, dust with flour, and boil until chewy.
Mix all the masala ingredients to create the homemade Wai Wai seasoning.
Heat butter and sauté garlic, onion, cabbage, capsicum, and chilli on high flame.
Toss boiled noodles with soy sauce, chilli sauce, homemade masala, and spring onion before serving hot.
