Toasted, fluffy pita bread is a comforting accompaniment to creamy or spicy dips—especially when it is made fresh using the best quality ingredients. While the process might seem a bit arduous for a regular day, the pay-off is truly worth every bite and incomparable flavour.
1.5 cups all-purpose flour 1.5 cups whole wheat flour 1 cup lukewarm water 1 teaspoon dry yeast 2 teaspoons salt 1 teaspoon sugar 2 tablespoons olive oil
Add the water, sugar and yeast to a large mixing bowl to let it bloom before tipping in half a cup of flour and forming a loose mixture.
Rest it for 15 minutes to bubble before adding in the remaining flour and salt, kneading until sticky.
Transfer the mixture to a well-floured surface and knead further for a couple of minutes before placing it in an olive oil greased deep dish.
Coat the ball of dough thoroughly with the oil and rest for 10 minutes before covering it with a damp cloth and letting it sit untouched for an hour.
Deflate the risen dough and divide it into equal portions and place them on a well-oiled tray to rest further for 15 minutes before rolling out gently.
Heat a cast iron skillet and drizzle a few drops of olive oil before placing one rolled out flatbread onto the surface.
Allow it to puff up before flipping to the second side and letting it inflate fully. Repeat the process as required, serve the bread warm.
