As the frosty tendrils of winter weave their way through our days, there's a comforting rhythm to be found in the kitchen. And what better way to embrace the season's chill than by embracing the verdant, versatile cruciferous hero: Broccoli.
250 g cubed paneer 2 tbsp butter 1 tbsp oil 2 pureed tomatoes 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala 2 tbsp cream 1 tsp sugar Salt to taste
Heat butter and oil, then saute the ginger-garlic paste till aromatic.
Add tomato puree and cook till thick, glossy, and slightly reduced.
Mix in turmeric, chilli powder, salt, and sugar, letting flavours deepen.
Add paneer and simmer gently so it absorbs the gravy.
Finish with cream and garam masala, stir softly, and serve hot.
