Enjoy a creamy, rich tomato soup perfect for a hearty lunch or light dinner. Fresh tomatoes and real cream create a comforting, velvety smooth soup ready in less than 30 minutes.
2 tbsp. butter or extra virgin olive oil 2 bay leaves ⅓ cup finely chopped onions ½ tsp finely chopped garlic 500g tomatoes 1 cup water or low-sodium vegetable broth Salt as required 1 tablespoon sugar Freshly crushed black pepper ½ cup bread cubes 1 tbsp. olive oil 1 pinch salt 1 to 2 pinches freshly crushed black pepper
Heat butter in a saucepan over low heat until it melts.
Add bay leaves, then sauté chopped onions and garlic until onions soften. Add chopped tomatoes and salt, then cover and simmer until tomatoes soften.
Remove from heat, cool the mixture, and discard bay leaves. Blend the cooled tomato mixture to a smooth consistency.
Pour the puree back into the pot, add water and sugar, then simmer on low heat.
Season with pepper, stir, and add heavy cream if desired. Garnish with parsley or coriander leaves. Serve hot with croutons.
