Beetroot chips are a healthy, crunchy snack made by thinly slicing beetroot and baking or air-frying until crisp. Lightly seasoned with salt and spices, they provide a colourful, nutrient-rich alternative to traditional potato chips.
2 medium beetroots 1 tbsp olive oil (or coconut oil) ½ tsp salt ½ tsp black pepper (optional) ½ tsp chilli powder or paprika (optional)
Wash and peel beetroots, then slice very thinly using a sharp knife.
Pat slices dry with a paper towel to remove moisture.
Toss in olive oil, salt, and spices of choice.
Arrange in a single layer on a baking tray lined with parchment paper.
Bake at 160°C for 20–25 minutes, flipping halfway, until crisp.
Cool completely before serving (they crisp up more as they cool).
