Nothing captures the cosy essence of the autumn season like a warm, freshly baked apple pie. Crisp tart apples are tossed with warm cinnamon, ground cloves, nutmeg, and brown sugar, then encased in a golden, buttery lattice crust. As it bakes, the spiced fruit caramelises into a sweet, aromatic filling that serves as the ultimate dessert centerpiece for autumn gatherings.
2 sheets pre-made or homemade flaky pie pastry 6 medium baking apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced 3/4 cup light brown sugar 2 tablespoons all-purpose flour 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1 tablespoon lemon juice 2 tablespoons unsalted butter (cut into small cubes) 1 egg whisked with 1 tablespoon water (for egg wash)
Toss the sliced apples in a large mixing bowl with lemon juice, brown sugar, all-purpose flour, ground cinnamon, ground cloves, and ground nutmeg until evenly coated.
Fit one sheet of pie pastry into a 9-inch pie dish, transfer the spiced apple filling into the crust, and dot the top with small cubes of unsalted butter.
Cover with the second pie sheet or arrange it in a lattice pattern, trim and crimp the edges tightly to seal, and brush the top pastry lightly with the egg wash.
Bake in a preheated oven at 200C for twenty minutes, then reduce heat to 180C and bake for another thirty to thirty-five minutes until the crust is deep golden brown and the apple filling bubbles gently before cooling.
