Chicken handi is a rich, slow-cooked curry where bone-in chicken simmers in onion-tomato gravy with whole spices, developing deep flavour and aroma traditionally cooked and served in a clay handi.
750 g chicken, bone-in 3 tbsp oil or ghee 2 cups finely sliced onions 1 cup pureed tomatoes 1 tbsp ginger-garlic paste 1 tsp garam masala Salt to taste Water as required
Heat oil in a deep pan and sauté onions until deep golden brown.
Add ginger-garlic paste and cook until the raw smell disappears.
Mix in tomato puree, salt, and spices, cooking till oil separates.
Add chicken and coat well with the masala, cooking briefly.
Add water, cover, and slow-cook until the chicken is tender and the gravy thickens.
