Home-style potato wedges are thick-cut potato pieces coated with spices and baked or fried until crisp. They are easy to make, flavourful, and enjoyed as a snack or side dish.
3 large potatoes (cut into wedges, skin on) 2 tbsp oil 1 tsp red chilli powder 1 tsp black pepper powder 1 tsp garlic powder or crushed garlic 1 tsp dried mixed herbs or oregano ½ tsp turmeric powder Salt to taste
Wash potato wedges and parboil in salted water for 5 minutes. Drain well.
In a bowl, mix oil, chilli powder, black pepper, garlic, herbs, turmeric, and salt. Coat the potato wedges evenly with this mixture.
Preheat oven to 200°C. Spread wedges on a baking tray. Bake for 25–30 minutes until golden and crisp, turning once midway.
Serve hot with ketchup or dip of choice.
