Masala khichdi is a one-pot dish which is made with rice, lentils and some aromatic spices. It is a spiced version of classic khichdi and is packed with flavours, making it a comforting dish for every household
1 cup rice ½ cup split moong dal 1 sliced onion 1 chopped tomato 1 diced carrot ½ cup green peas 1 diced potato 2 slit green chillies 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chilli powder ½ tsp garam masala 1 tsp cumin seeds 1 bay leaf 1 small piece cinnamon stick 4 cups water Salt as required 2 tbsp ghee Fresh coriander leaves for garnish
Rinse rice, dal thoroughly, and soak them together for 20 minutes.
Heat ghee in a pressure cooker, add cumin seeds, bay leaf, cinnamon stick and let them sizzle.
Add onions, saute until golden, mix in ginger-garlic paste, green chillies and tomatoes and cook until soft.
Stir in turmeric, red chilli powder, garam masala, add diced vegetables, salt and mix well.
Add the soaked rice, dal, mix and pour water, pressure cook for 3 whistles or until soft.
Let the pressure release naturally, open the lid, mix gently and garnish with fresh coriander.
