Punjabi-Style Chana Masala, also known as Chole Masala, is a rich, authentic North Indian curry made with chickpeas, spices, onions, tomatoes, and herbs. This vegan delight is packed with proteins and minerals.
1 cup dried white chickpeas 2.5 cups water 1 black tea bag ½ tsp. salt ⅓ cup chopped onions and tomatoes ½ tsp. ginger garlic paste, turmeric powder, and red chili powder ¾ tsp. amchur powder 2 tbsp oil
Soak the chickpeas in water overnight or for 8-9 hours.
Pressure cook the soaked chickpeas with a black tea bag and 2.5 cups of water for 12-15 whistles.
Heat oil in a pan and sauté ginger-garlic paste until the raw aroma fades. Add chopped onions and sauté until they turn light brown.
Add tomatoes and cook until they soften and the oil starts to leave the mixture. Add the powdered spices, red chilli powder, and turmeric powder.
Add the cooked chickpeas, salt, and 1 cup of the cooking stock. Simmer until the gravy thickens. Garnish with coriander leaves and ginger julienne. Serve hot with rice or bread.
