Shrikhand is a traditional dessert from Maharashtra and Gujarat, prepared by straining curd until thick and creamy. During Holi, flavoured versions are often served alongside festive meals. Rose shrikhand adds floral sweetness and a soft pink tone suited to spring celebrations. The texture should be smooth and chilled. Nuts provide light crunch and contrast.
2 cups thick curd ½ cup powdered sugar 1 tbsp rose syrup ¼ tsp cardamom powder 2 tbsp chopped pistachios or almonds
Hang curd in a muslin cloth for 4–5 hours to remove excess whey.
Transfer thick curd to a bowl and whisk until smooth.
Add powdered sugar, rose syrup and cardamom, mixing thoroughly.
Chill for at least 1 hour to set flavour and texture.
Garnish with nuts and serve cold.
