The traditional Gujarati dessert, basundi, is thick and sweetened milk that can be relished as is in a kulhad or poured over other Indian sweets. To make this Holi-special dessert, follow these five simple steps.
1 litre of milk 1/2 cup sugar 4-5 strands saffron 4-5 green cardamom pods A pinch of nutmeg 2 tablespoons chopped almonds 2 tablespoons chopped pistachios 2 tablespoons chopped cashew nuts
Boil the milk and then let it simmer till it is reduced to half its volume.
Add crushed cardamom, saffron, and nutmeg. Stir well to combine the flavours.
Once the milk has thickened, add sugar and stir till it dissolves.
In another pan, lightly roast chopped nuts.
Garnish the basundi with roasted nuts, and your dessert will be ready.
