Himalayan Thukpa is a warming noodle soup from the Himalayan regions, prepared with fresh vegetables, spices, and handmade noodles. It is hearty, filling, and enjoyed as a comforting meal during colder weather.
1 cup noodles (egg or wheat) 1 onion (sliced) 1 tomato (chopped) 1 carrot (julienned) ½ cup cabbage (shredded) 1 green chilli (sliced) 1 tsp ginger-garlic paste 1 tsp soy sauce 1 tsp vinegar ½ tsp black pepper powder 2 cups vegetable stock or water 2 tbsp oil Salt to taste
Heat oil in a pan and sauté onion, ginger-garlic paste, and green chilli.
Add tomato, carrot, and cabbage, cook lightly.
Pour in stock, add noodles, soy sauce, vinegar, salt, and pepper.
Simmer until noodles are cooked, garnish with coriander, and serve hot.
