A bowl of moong dal feels like a warm hug on tired evenings. It’s light, easy on the stomach, and ready in no time. Moong dal is also a great source of plant-based protein.
½ cup yellow moong dal ¼ tsp turmeric powder Salt to taste 1 pinch asafoetida (hing) 1 tsp mustard seeds 1 tsp cumin seeds (jeera) 2 garlic cloves (chopped) 1 green chilli (slit or chopped) 1 tomato (chopped) 1 tbsp ghee or oil
Rinse the dal a few times till the water runs clear, then boil it with haldi, salt, hing, and 1½ cups water until soft and broken.
Heat ghee in a small pan and add mustard seeds. Let them pop, then add jeera, garlic, and green chilli.
Toss in the tomatoes and cook till they turn soft and pulpy. This tempering smells incredible.
Pour the hot tempering over the cooked dal and give it a good mix. Simmer it together for a few more minutes.
Check for salt, squeeze some lemon juice, and garnish with chopped coriander.
Serve with rice or phulka. It’s the kind of meal you keep coming back to without getting bored.
