Lobia dal is a wholesome Indian curry made with lobia, simmered in a spiced onion-tomato gravy. Rich in protein, fibre, and iron, it is comforting, nutritious, and pairs perfectly with rice or roti.
1 cup lobia soaked 5-6 hours 2 tbsp oil 1 finely chopped onion 2 finely chopped tomatoes 2 slit green chillies 1 tsp ginger-garlic paste 1 tsp cumin seeds ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala Salt to taste Fresh coriander leaves for garnish
Pressure cook soaked lobia with water and a little salt until soft (2-3 whistles).
Heat oil in a pan, add cumin seeds, onions, and sauté until golden.
Add ginger-garlic paste, tomatoes, green chillies and cook until the masala releases its oil.
Add turmeric, red chilli, and coriander powder, mix well, then stir in the cooked lobia along with its stock.
Simmer for 7-8 minutes, add garam masala, and garnish with coriander.
