Lentil soup, or dal ka soup is a comforting and nutritious meal that's easy to make and perfect for a chilly rainy evening. If you want a protein-rich, warm bowl of soup, try this easy recipe of lentil soup.
1 cup dried green lentils 1 onion, chopped 2 carrots, chopped 4 cloves garlic, minced 1 tablespoon olive oil 4 cups vegetable broth 2 bay leaves 1 teaspoon dried thyme 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup diced tomatoes Chopped cilantro for garnish Yoghurt for ganish
Heat some oil and add onion, carrots, and garlic. Cool till softened.
Stir in lentils, vegetable broth, bay leaves, thyme, salt and pepper. Boil and let it simmer.
Once the lentils are tender, add diced tomatoes. Simmer for another 5 minutes.
Garnish with chopped cilantro and some yoghurt. Serve hot.
