When mornings feel busy and rushed, this hung curd sandwich can be a quick breakfast option. Light and easy to make, this hung curd sandwich makes for a satisfying breakfast that does not feel heavy, and you can have it on the go.
1 cup hung curd 4 slices of bread 2 tbsp grated carrot 2 tbsp chopped cucumber (deseeded) 1 tbsp chopped capsicum ½ tsp black pepper Salt to taste ½ tsp chaat masala 1 tsp green chutney (optional) 1 tsp butter or olive oil
Make hung curd by draining the regular curd until it turns thick and creamy, so that it spreads easily without making the sandwich soggy.
In a bowl, mix the hung curd with some grated carrot, chopped cucumber, capsicum, salt, pepper, and chaat masala to make a flavourful filling.
Taste and adjust the seasoning as needed so the mixture feels balanced, a bit tangy, and lightly spiced.
Spread a thin layer of butter or green chutney on the bread slices, then spread the hung curd on it.
Place another bread slice on the top and press gently. Cut this into halves or triangles so that you can carry it easily.
Serve the hung curd, or wrap it in foil to keep it in the tiffin for later.
