A deceptively simple recipe made using a few ingredients, this egg salad is a great way to check off a day’s protein requirement without too much hassle. Enjoy it as a satisfying meal after hitting the gym or spoon it over toast, for a light yet filling dinner.
4 hard-boiled eggs ½ cup sour cream 2 teaspoons Dijon mustard 1 teaspoon red chilli powder 2 spring onions, chopped 1 tablespoon chopped coriander Salt and pepper, to taste
Peel and chop up the hard-boiled eggs while combining the sour cream, mustard and chilli powder with salt and pepper separately.
Tip in the spring onions and coriander into the eggs before adding the sour cream mixture and using a spoon to gently fold in the ingredients.
Refrigerate for 20 minutes or eat at room temperature, as a meal or with whole wheat toast.
