Hot, flaky paratha wrapped around masala-coated eggs, onions, and a hit of tangy sauce, this egg roll brings classic street flavours straight to your kitchen in the quickest, most satisfying way.
2 cups maida 1/2 tsp salt Water as needed for dough 2 tbsp oil (for dough and cooking) 4 eggs 1 large thinly sliced onion 2 finely chopped green chillies 1/2 tsp red chilli powder 1/2 tsp chaat masala Salt to taste 2 tbsp tomato ketchup 1 tbsp green chutney 1 tsp lemon juice
Mix flour, salt, and oil, add water, and knead into a soft dough, then rest it for 15 minutes.
Divide the dough, roll into thin parathas, and cook them lightly golden on a hot pan with a little oil.
Beat eggs with salt and chilli powder, pour onto the pan, and place a cooked paratha on top so it sticks.
Flip the egg-paratha and cook until the egg is fully set and slightly crisp.
Add onions, green chillies, chaat masala, lemon juice, and sauces, then roll tightly and serve hot.
