High-Protein Egg Curry You Can Whip Up In Under 30 Minutes

Perfect for the days when you’re too busy to cook, egg curry can be whipped up in less than half an hour and also gives you a protein boost. To make anda curry at home, follow this step-wise guide.

Ingredients

6-8 large eggs 2 tbsp ghee 1 onion (chopped) 1 tsp ginger-garlic paste 1 tbsp oil (for frying) 2 tomatoes 1/2 tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/4 cup yoghurt (optional) 1/2 cup water Salt to taste Coriander leaves (for garnish).

Step 1

Boil the eggs and peel them. Add a pinch of turmeric and red chilli powder and shallow fry till golden.

Step 2

Heat some ghee and saute onions. Add ginger-garlic paste and cook for a few minutes.

Step 3

Add tomatoes, red chilli, coriander, and cumin powders. Whisk in yoghurt.

Step 4

Add water and salt. Let the curry simmer. Gently add fried eggs and mix in garam masala.

Step 5

After 5-10 minutes, garnish with coriander leaves and serve.
