Why stick to just urad dal for your idli batter? Maximise the protein content, use a mix of lentils, and make dal idlis whenever you’re in the mood for a South Indian snack or breakfast. Follow this dal idli recipe.
1 cup masoor dal ½ cup urad dal 1 inch of ginger 2-3 green chillies 1 teaspoon cumin seeds ½ teaspoon hing 8-10 curry leaves Salt to taste 1 tablespoon oil
Rinse and soak masoor dal and urad dal separately overnight.
Drain excess water and grind the lentils till you get a smooth batter.
Add grated ginger, chopped green chillies, cumin seeds, hing, curry leaves, and salt.
Let the batter ferment. Heat some oil and add mustard seeds and curry leaves.
Mix the tempering with the batter and pour into idli moulds.
Steam to perfection and serve the dal idlis with sambar and chutney.
