Anda or egg bhurji is the Indian-style scrambled egg that can be quickly whipped up for a high-protein lunch or dinner. On the days when you don’t feel like cooking, whip up anda bhurji within 15 minutes.
2-3 eggs 1 onion 1 green chilli 1/2 inch ginger 1/2 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1/2 teaspoon garam masala 1 tablespoon oil Salt to taste Coriander leaves for garnish
Whisk the eggs. Chop onion, green chilli and ginger.
Heat some oil and saute onions. Add green chillies and ginger.
Mix turmeric powder, red chilli powder, and garam masala. Stir till aromatic.
Pour the whisked eggs and stir. Cook till they are scrambled and cooked thoroughly.
Garnish with chopped coriander leaves and serve with roti.
