Chickpea salad is a protein-rich dish that is a combination of the nutty flavour of chickpeas with the refreshing crunch of fresh vegetables. This versatile salad is easy to prepare and the best recipe for vegans, or anyone looking for a light and filling dish.

Ingredients

1 ½ cups cooked chickpeas 1 diced cucumber 1 diced tomato ½ finely chopped red onion ¼ cup chopped fresh parsley ¼ cup feta cheese 2 tbsp olive oil 1 tbsp lemon juice 1 tsp honey Salt and pepper to taste A pinch of chilli flakes

Step 1

Dice cucumber, tomato, onion, and chop the parsley.

Step 2

In a bowl, mix chickpeas, cucumber, tomato, onion, and parsley.

Step 3

In a small bowl, whisk olive oil, lemon juice, salt, and pepper, together.

Step 4

Pour the dressing over the salad and toss gently to coat all ingredients.

Step 5

Sprinkle with feta cheese and chilli flakes if desired.

Step 6

Serve immediately or cool it before serving.
