Khichdi is a staple and comfort Indian food mainly enjoyed for lunch. This variation of the popular one-pot meal uses ragi as its star ingredient for its high-fibre content and flavour.
1 cup ragi, soaked for 2 hours 1/2 cup moong dal, soaked for 30 minutes 1 small onion 1 small tomato 1 small carrot 1/4 cup green peas 1 tsp cumin seeds 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1/2 tsp garam masala 2 tbsp ghee or oil 4 cups water Salt to taste Fresh coriander leaves for garnish
Drain and rinse the soaked ragi and moong dal.
In a pressure cooker, heat ghee/oil. Add cumin seeds. When they splutter, add onions and sauté until golden brown.
Add tomatoes, carrots, and green peas. Cook for a few minutes. Add turmeric, red chilli powder, garam masala, and salt.
Add ragi and moong dal to the cooker. Stir well to combine.
Add 4 cups of water. Close the lid and pressure cook for 3-4 whistles. Let the pressure release naturally. Open the lid, stir well, and garnish with coriander leaves.
