Quinoa has become famous among health enthusiasts looking to replace gluten-rich ingredients. It is good for the digestive system, and its texture appeals to the taste buds. Here is a quick salad recipe you should try out.
1 medium cucumber 1 cup uncooked quinoa 2 cups water 1 can of chickpeas ¼ cup olive oil, lemon juice 2 garlic cloves ½ tsp sea salt Pepper to taste 1 tbsp red wine vinegar 1 cup chopped coriander 1 medium red bell pepper
Cook rinsed quinoa for 15 minutes on a medium flame. Remove from heat, drain excess water, and keep it aside.
Cut all the vegetables and toss them into a salad bowl.
Add cooked quinoa along with chickpeas.
Prepare a dressing with olive oil, lemon juice, salt, garlic cloves, and red wine vinegar.
Pour the dressing over the salad and serve it.
