Give your pasta a healthier twist by trying this multi-grain pasta recipe. Filled with the goodness of vegetables, this pasta is a healthy and fibre-rich option that fits in perfectly with gym goals, without having to compromise on the flavour.
250 g multi-grain pasta 1 tbsp olive oil 4 cloves garlic, finely chopped 1 small onion, sliced 1 cup broccoli florets ½ cup bell peppers, diced ½ cup sweet corn ½ cup mushrooms, sliced 1 medium tomato, chopped 1 tsp chilli flakes 1 tsp mixed herbs ½ tsp black pepper powder Salt to taste 2 tbsp grated Parmesan cheese (optional) Fresh basil leaves for garnish
Boil the multi-grain pasta until they turn soft and not mushy, like al-dente. Drain it and reserve the pasta water to use in the further process.
In a pan, heat olive oil and sauté some garlic and onions until they turn aromatic.
Now, to this, add chopped broccoli, mushrooms, corn, bell peppers, and tomatoes until they turn soft but not mushy.
Sprinkle chilli flakes, mixed herbs, black pepper, and salt onto this. Toss everything so that the seasoning gets equally spread over the vegetables.
To the pan, add the cooked pasta and a little splash of reserved pasta water. Mix everything so that every piece is nicely coated with spices.
Top it up with Parmesan cheese, if using, some fresh basil leaves and serve the warm multi-grain pasta.
