A true Greek salad, or Horiatiki, is a masterclass in ingredient quality rather than complexity. In Greece, you won’t find a single leaf of lettuce; instead, the focus is on sun-ripened tomatoes and high-phenolic olive oil. The salad creates its own "dressing" as the salt draws the juices out of the vegetables, mingling with the oregano to form a savory nectar at the bottom of the bowl.
3 large, ripe vine tomatoes, cut into chunky wedges 1 cucumber, partially peeled and sliced into thick half-moons 1/2 red onion, thinly sliced into rings 1/2 cup Kalamata olives 200g block of high-quality Feta cheese (never crumbled) 1 tsp dried Greek oregano 3 tbsp extra virgin olive oil and a splash of red wine vinegar
Combine the tomatoes, cucumbers, onions, and olives in a wide, shallow bowl.
Drizzle with the red wine vinegar and extra virgin olive oil, then toss gently to coat.
Place the whole block of Feta cheese directly on top of the vegetables; the traditional way to serve it, allowing guests to break off as much as they like.
Sprinkle the dried oregano over the entire salad and let it sit for 5 minutes before serving so the flavours can marry.
