Cucumber noodles are made by thinly slicing cucumber into noodle-like strips. They are perfect to enjoy a low-carb, healthy or gluten-free craving for noodles. The crunchy texture of cucumber is paired with a variety of sauces, making it a versatile side for salads.
2 cucumbers 1 tbsp olive oil 1 tbsp lemon juice Salt and pepper to taste Sesame seeds and fresh herbs for garnish
Use a julienne peeler to create noodle-like strips from the cucumber
To remove excess water, sprinkle salt on the noodles, let them sit for 10-15 minutes and then pat dry with a paper towel.
Mix the noodles with olive oil, lemon juice, salt and pepper.
Garnish it with some sesame seeds and fresh herbs and serve!
