Jackfruit seeds stir-fried with spices are a popular recipe in South Indian households. It is rich in nutrients like proteins, fibres and antioxidants. With a nutty and earthy flavour, jackfruit seeds are delicious and perfectly pair with rice and flatbreads.
1 cup jackfruit seeds 1 tbsp oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1 dry red chilli 1 finely chopped onion 2 minced garlic cloves 1/2 tsp turmeric powder 1 tsp red chilli powder (adjust to taste) Salt to taste Few curry leaves Coriander leaves for garnish
Wash and pressure cook the jackfruit seeds until soft, then peel off the outer skin and cut the seeds into halves or quarters.
Heat oil in a pan, add mustard seeds, let them splutter, then add cumin seeds, dry red chilli, and curry leaves.
Add chopped onions, garlic to a pan and sauté until they turn golden in colour.
Add the boiled jackfruit seeds, turmeric powder, red chilli powder, salt, mix well and cook for 5- 7 minutes, stirring occasionally.
Garnish with coriander leaves and serve hot with roti.
