Pumpkin soup is naturally soothing due to its fibre content and mild sweetness. Slow cooking helps soften the vegetable while keeping the soup light and easy to digest. It is often eaten warm as a standalone meal during colder months.
2 cups pumpkin, peeled and cubed 1 tbsp olive oil or butter 1 onion, chopped 2 cloves garlic, chopped 3 cups vegetable stock Salt and black pepper to taste A pinch of nutmeg or cinnamon
Heat oil or butter and sauté onion and garlic until soft.
Add pumpkin cubes and cook briefly.
Pour in stock and simmer until pumpkin is tender.
Blend until smooth, season, and serve hot.
