Mango pickles are mostly tangy and spicy, but a few foodies also make it sweet. This makes a delightful accompaniment to a traditional Indian thali, balancing sour and spicy notes or infusing steamed rice with a burst of flavour. Try this recipe.
1 tsp cumin seeds 2 chopped raw mangoes 1 tsp fennel powder 1 tsp mustard seeds 2 tbsp oil 1 cup jaggery 1 tsp hing Salt to taste 1 tbsp red chilli powder
Peel and roughly chop mangoes.
Add oil to a kadhai, and sprinkle with mustard and cumin seeds.
Once seeds start crackling, add mangoes, salt, and jaggery.
Let the ingredients cook for 10 minutes or until the oil separates.
Add red chilli powder and fennel powder.
Let the pickle cool off before storing it in an airtight container.
