Hara bhara kabab is a green, veggie-loaded snack prepared by mixing spinach, peas, potatoes, and mild spices. Crispy from outside and soft from inside, these kababs are ideal for evening chai or as party starters or when you look for something tasty yet nutritious.

Ingredients

1 cup spinach leaves (blanched, squeezed, chopped) ½ cup boiled green peas 2 medium boiled, mashed potatoes 2 tbsp besan or breadcrumbs 1–2 green chillies, finely chopped 1 tsp ginger-garlic paste ½ tsp garam masala ½ tsp chaat masala ¼ tsp cumin powder Salt to taste 2–3 tbsp oil

Step 1

Blanch the spinach leaves in hot water for about 2 minutes, drain, squeeze out the extra water, and chop finely. Boil peas until they turn soft and keep them aside.

Step 2

In a bowl, mash the boiled potatoes and add chopped spinach and boiled peas.

Step 3

Add ginger-garlic paste, green chillies, garam masala, chaat masala, cumin powder, and salt and mix everything.

Step 4

Add besan or breadcrumbs as per the requirement so as to bind the mixture until you get a non-sticky, shapeable consistency.

Step 5

Grease your palms with a little oil and shape the mixture into small round or oval kababs.

Step 6

In a pan, heat some oil and shallow-fry the kababs on medium flame until they turn crisp and golden on both sides. Serve hot with green chutney.
