Hara bhara kabab is a vibrant green snack made from spinach, peas and potatoes blended with gentle spices. Homemade versions taste fresher and lighter than restaurant versions, especially when pan-fried instead of deep-fried.
1 cup spinach (blanched and squeezed dry) ½ cup green peas (boiled) 1 boiled potato 1 green chilli ½ tsp garam masala ½ tsp ginger paste Salt and breadcrumbs
Blend spinach, peas, green chilli and potato lightly; keep some texture instead of making a paste.
Mix in ginger paste, garam masala, salt and breadcrumbs until you can shape firm patties.
Form small kababs and coat lightly with breadcrumbs if needed for extra crispness.
Pan-fry on medium heat with minimal oil until both sides turn golden.
