Habshi halwa is a slow-roasted Hyderabadi delicacy where wheat flour is patiently cooked in ghee until deep, dark, and glossy, releasing smoky aromas and rich flavours once reserved for royal kitchens and wedding feasts.
1 cup wheat flour 1 cup ghee 1 cup sugar 2 cups water 2 tbsp chopped mixed dry fruits
Roast wheat flour on a very low flame, stirring continuously until aromatic and dark.
Add ghee gradually, letting the flour absorb it and deepen in colour.
Boil water and sugar separately until the sugar dissolves completely.
Slowly add the hot syrup to the roasted flour, stirring to prevent lumps.
Cook until glossy, thick, and rich, then garnish with dry fruits and serve warm.
