It is ideal for days when you want nourishment that feels warm yet simple. Serve it plain or with fresh herbs.
1 cup seasonal vegetables (carrot, broccoli, pumpkin, beans) ½ cup spinach or methi 1 small onion 1 tsp olive oil Salt and pepper
Sauté the chopped onion in olive oil until soft.
Add the vegetables and enough water to cover, then simmer until tender.
Blend partially for a light, textured soup or leave it chunky.
Season with salt and pepper and serve warm.
