On the joyous occasion of Guru Nanak Jayanti, many devotees prepare traditional dishes to share with family and friends after prayers. Seviyan Kheer, a creamy vermicelli pudding, is one such offering that signifies sweetness and togetherness.
1 tbsp Ghee 1 cup Roasted Vermicelli (Sevai) 1 litre Milk 15–20 Raisins ½ cup Granulated Sugar 1 tsp Cardamom Powder 2 tbsp Slivered Almonds and Pistachios
Heat 1 tbsp ghee in a heavy-bottomed pan on low flame. Add 1 cup roasted vermicelli and stir frequently until golden brown. Remove from the pan and set aside.
In the same pan, pour 1 litre milk and bring it to a boil on medium heat, stirring often to prevent it from sticking.
Once boiled, reduce the flame and cook for 4–5 minutes, scraping the sides and mixing the thickened milk back in.

Add ½ cup sugar and 1 tsp cardamom powder. Mix thoroughly and cook for another 3–4 minutes.
Check for sweetness and consistency. If it becomes too thick after cooling, add a little warm milk to loosen it.
Garnish with 2 tbsp slivered almonds and pistachios. Serve warm or chilled as preferred.
