Gujarati-Style Khichdi: One-Pot Recipe For A Quick Meal

For the times when you want to whip up a healthy yet quick meal, you can go for Gujarati khichdi. Made with pulses, it is extremely nutritious and light, and yet so satisfying when paired with curd and chutney.

Ingredients

1 cup split mung dal 1 cup rice 3 tablespoons ghee 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric 1 teaspoon black peppercorns Salt to taste 2.5 cups water Chopped coriander leaves (for garnish)

Step 1

Rinse and soak mung dal and rice for at least half an hour.

Step 2

Heat ghee and add cumin seeds, mustard seeds, and hing.

Step 3

Add grated ginger, minced garlic, turmeric, and black peppercorns, and saute.

Step 4

Add the tadka with the soaked rice and dal to a pressure cooker. Season with salt.

Step 5

Pour in water, close the lid, and cook for 4-5 whistles on medium heat.

Step 6

Garnish with chopped coriander leaves and some ghee, and serve hot with a side of dahi.
