Gujarati sev usal is a traditional street-style dish made with dried peas curry, flavoured with spices, and topped with crunchy sev. It’s tangy, spicy, and very satisfying.
1 cup dried white peas (soaked overnight) 1 onion (chopped) 2 tomatoes (chopped) 2 green chillies 1 tsp ginger-garlic paste ½ tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder 1 tsp cumin powder ½ tsp garam masala Salt to taste 2 tbsp oil ½ cup sev (for topping) Chopped coriander leaves
Pressure cook soaked peas with water and salt until soft.
Heat oil in a pan, add onions and sauté until golden. Add tomatoes, green chillies, ginger-garlic paste, and dry spices. Cook until oil separates.
Add boiled peas with water to make a curry-like consistency. Simmer for 5–7 minutes.
Serve hot topped with sev and fresh coriander with a side of toasted buns.
