There is a craving to have something sweet after meals, but not every time can a store-bought one be good for health. For those cravings, make these Gujarati-style methi laddus that use jaggery in place of refined sugar and blend fenugreek, whole wheat, and ghee to make a satisfying homemade bite.
1 cup fenugreek (methi) seeds, powdered 2 cups whole wheat flour 1½ cups grated jaggery 1 cup ghee ½ cup edible gum (gond), fried and crushed ¼ cup almonds, chopped ¼ cup cashews, chopped 2 tbsp poppy seeds (optional) 1 tsp cardamom powder 2 tbsp dry coconut, grated (optional)
In a pan, lightly roast the methi powder on low heat or soak and dry the seeds before you begin to grind. This will soften the bitterness of the methi seeds.
Now, heat the ghee and roast the whole wheat flour until it turns golden brown and you get a smell of nutty aroma.
To the roasted flour, add crushed gond, chopped almonds, cashews, coconut, and cardamom. Mix everything well so that every ingredient gets mixed evenly in the mixture.
Turn off the flame and let the mixture cool down a bit before adding the grated jaggery to it. Mix constantly until the jaggery melts naturally.
Grease your palms with a little ghee and shape the mixture into medium-sized laddus while still warm. Let the laddus cool down thoroughly and then store them in an airtight box.
