Gujarati khandvi is a lightweight delight often enjoyed for breakfast or evening snacks. It is easy to make and has a nutty flavour because of the filling and garnish of coconut slivers. This is a short guide to make it at home.
2.25 cups water 1 cup besan ¾ cups curd 1 tsp ginger, mustard seeds A pinch of hing ¼ tsp turmeric powder ⅔ tsp salt 2 tbsp grated coconut 2 tbsp coriander 1 tbsp oil 8-10 curry leaves 2 tbsp sesame seeds 1 tsp green chillies
Whisk yoghurt and add ginger-chilli paste, turmeric powder, asafoetida, and salt.
Add besan and whisk until you have a smooth blended consistency. Mix grated coconut and coriander and keep it aside.
Grease a saucepan and pour the batter in it. Cook it on medium flame until the blend thickens.
Grease the back of a stainless steel plate and spread a thin layer on it. Let it settle, and cut it into 2-3 inch thick stripes.
Roll the stripes into cylinders. Prepare the tempering and pour over the khandvi.
Sprinkle the stuffing over khandvi and enjoy.
