Gujarati dal is a unique preparation flaunting sweet and tangy notes. It completes a traditional thali, adds protein to the spread, and goes well with rice and chapati. Here is how you can enjoy regional flavours at home.
For Dal ¾ cup arhar dal 4 cups water ½ tsp turmeric, cumin ½ tsp coriander, chilli powder 1.5 tbsp jaggery 3-4 kokums 1 tomato 2 green chillies 1-inch ginger Salt as needed 2 tbsp coriander leaves
For Tempering ½ tsp cumin seeds 2 tbsp ghee A pinch of hing ½ tsp mustard seeds 1-inch cinnamon 2-3 red chillies ½ tsp fenugreek seeds 3-4 cloves 5-6 curry leaves
Pressure cook arhar dal for two whistles after soaking it for 30 minutes.
In a kadhai, cook the tomato with ginger, chillies, jaggery, and powdered spices.
Pour cooked dal into it and add water to adjust the consistency.
Prepare the tempering and pour it over the dal. Cook for 2-3 minutes before turning off the heat.
Drizzle lemon juice and sprinkle chopped coriander leaves over the dal and serve it.
