Gujarati dal is a spiced lentil curry made with toor dal, tamarind, jaggery, and mild spices. It has a balance of sweet, sour, and spicy flavours, and is often served with rice.
1 cup toor dal (pigeon peas) 2 tbsp tamarind pulp 2 tbsp jaggery (grated) 1 tomato (chopped) 2 green chillies (slit) 1 tsp ginger paste ½ tsp turmeric powder 1 tsp cumin seeds 1 tsp mustard seeds 2 tbsp ghee Salt to taste
Cook toor dal with turmeric until soft and mash well.
In a pan, heat ghee and add mustard seeds, cumin, and green chillies.
Add ginger paste, tomato, and tamarind pulp, then stir in cooked dal.
Mix in jaggery, season with salt, and simmer until flavours combine. Serve with steamed rice.
