Summers in Gujarati households are incomplete without aam chunda, a sweet and spicy pickle that can be paired with paratha, thepla, or even infuse sandwiches with interesting notes. Here is your guide to make it.
1.5 cups of sugar 2 mangoes ¼ tsp salt ½ tsp red chilli powder ½ tsp roasted cumin powder
Rinse and wipe mangoes. Peel off their skins and grate them.
Cook mangoes with salt and sugar in a pan. You can add jaggery instead.
Cook the ingredients some more until sugar reaches a thread-like consistency.
Add the rest of the powdered spices, and cook for a few more minutes.
Mix the ingredients and turn off the heat. Let the chunda cool off.
Store aam chunda in an airtight container and enjoy!
