Puran poli is the heart of a Gudi Padwa feast, which is soft and aromatic in every bite. This festive flatbread is filled with sweet chana dal stuffing, bringing warmth and festivity to the Gudi Padwa spread.
1 cup chana dal 1 cup jaggery (grated) 1½ cups wheat flour 2 tbsp oil or ghee ½ tsp turmeric powder ½ tsp cardamom powder ¼ tsp nutmeg powder Water as needed Ghee for cooking
Pressure cook chana dal for about 3 to 4 whistles. Let it cool, then mash lightly to make a smooth base for the filling.
Add some grated jaggery to the cooked dal and cook over low heat, stirring constantly, until the mixture begins to thicken.
In a bowl, mix wheat flour with a pinch of turmeric, a little oil, and water to make a soft dough. Cover and keep it to rest for at least 15 to 20 minutes.
Add cardamom and nutmeg powders to the prepared filling, mix well, and divide into equal portions to make stuffing easy.
Take a dough ball and place the stuffing within, seal it gently, and then roll it into flat discs with a rolling pin.
Cook it on a hot tawa with little ghee until you see golden spots on both sides, then serve warm for a lovely Gudi Padwa treat.
