A great chicken taco is all about the char and the zing. By using boneless chicken thighs, you ensure the meat stays juicy even after hitting a high-heat grill or pan. The marinade of lime juice and cumin tenderises the meat while the smokiness of the tortilla provides the perfect earthy base. It’s a high-protein meal that takes less than 20 minutes from prep to plate.
500g chicken thighs, diced 8 small corn or flour tortillas The Marinade: 2 tbsp olive oil, juice of 1 lime, 2 cloves minced garlic, 1 tsp cumin, 1/2 tsp chili powder. Toppings: Sliced avocado, pickled red onions, fresh cilantro, and a dollop of sour cream.
Toss the chicken in the marinade ingredients and let it sit for at least 15 minutes to soak up the citrus.
Heat a cast-iron skillet over high heat. Cook the chicken until it has a deep brown char and is fully cooked through.
Char your tortillas directly over a gas flame for 5 seconds per side to get them smoky and pliable.
Pile the chicken onto the tortillas and load up on your toppings. A final squeeze of lime over the whole tray is essential for that street-food flavour.
