Homemade Greek yoghurt is thick, creamy and naturally rich because it is simply strained curd without additives. The slow draining removes excess whey and creates a velvety texture that works for parfaits, dips, smoothies and marinades. It tastes fresher than most supermarket versions and lasts well when chilled. Making it at home is simple and requires minimal equipment.
2 cups plain curd Muslin cloth Strainer and bowl
Place a strainer over a bowl and line it with muslin.
Pour the curd into the cloth and gather the edges.
Refrigerate for 4–6 hours until the excess whey drains and the yoghurt thickens.
Transfer the thick yoghurt to a container and store in the fridge.
